The name of the restaurant is Forbes Street by Gareth Mullins. Let’s talk about him.
For over 20 years Gareth has delighted patrons of five-star hotels in Ireland and Australia with some extraordinary culinary achievements. It all began when he qualified from DIT Cathal Brugha Street in 1999 and then he was off, spending five years in Sydney, Australia, where he worked as head chef at the W Hotel and as senior chef de partie in the Radisson Plaza Hotel.
Next came seven years in the Merrion Hotel as head chef in The Cellar Restaurant & Bar where he helped The Cellar achieve two AA rosettes and the bar was recommended in the Michelin Guide.
Gareth was appointed executive chef at The Marker Hotel when it opened in 2013 and for the last decade has been responsible for some truly brilliant creations coming out of The Marker Hotel’s four kitchens: The Brasserie, the Rooftop Bar and Terrace, the Marker Bar and in-room dining.
If the name, the face or the voice seems familiar, it’s probably because Gareth makes frequent appearances on TV and radio, including Late Lunch Live, The Pat Kenny Show, The Six O’Clock Show, Operation Transformation. He has also been featured in the Irish Times, Sunday Business Post, Food & Wine and Yes Chef Magazine. Our Brasserie has been awarded two AA rosettes and Best Hotel Restaurant in Dublin in both 2016 and 2018 at the RAI awards thanks to Gareth and his outstanding team.
But what about the man behind the extraordinary cooking?
Gareth is family man and a true blue Dubliner from Donaghmede. He’s equally passionate about preparing an award-winning venison pie with his team in the Forbes Street kitchen as he is about teaching his kids to make the perfect scrambled eggs at home. That passion comes through his cooking and his conversations. Talk to him and you’ll hear it. He loves Dublin and the people in this city and he is a big supporter of the craft producers all over the country too: Their enthusiasm inspires him.
That love of food and cooking and fantastic indigenous ingredients is there to see not only in his day-to-day work but also in his determination to pass his knowledge on to the next generation. It’s why Gareth was appointed head of Euro-Toques Ireland. Founded by the great Myrtle Allen, this is a nurturing community of like-minded chefs, cooks, producers and educators that celebrates the best of Ireland’s food and drink. He’s the perfect man for the job.

A special restaurant like Forbes Street needs a special sommelier and that’s what we’ve got. Say hello to Maxim, our resident circumnavigator, wine encyclopaedia and raconteur.
Maxim has been to 80 countries so far – and has developed a passion for champagne and a fascination for the Irish Wine Geese stories which were unknown to
him before he came to Ireland.
His other favourite part of this list is the Coravin. Here, you get to taste iconic wines by the glass, always fresh, including some of Maxim’s, and our, favourite producers
Location
The new restaurant features an open kitchen where diners can experience all of the theatre and atmosphere of the kitchen while the intimate booths, low level lighting and extensive wine cave with a fabulous focus on the new and old Irish, ‘Wine Geese’ all add to the dining experience. Menus include A La Carte dinner menus and pre theatre menus which are in keeping with the location of the restaurant, just steps from the famous Bord Gais Energy Theatre in Grand Canal Square.
