The Story Behind Some of Our Iconic Dishes
When you order our cheese plate, take a look at the stone your crackers are served on. My culinary team ventured out to forage some sea stones from Dublin’s local beaches. I then carved the stones myself so that they can house our homemade lavosh crackers, which are served alongside our delectable Irish cheeseboard.
Our signature dessert, the Bollinger sorbet is served in a specially crafted base made from the Bollinger Champagne bottle itself. I thought that the bottom of the bottle provided the perfect size for a palette cleanser. So, I carved out the base of the bottle, cleaned and sanded it down, and now sit this sumptuous dessert in it for your enjoyment.
